For most of my life, my favorite meal of the day was breakfast. Funny enough, now that I have adopted a keto lifestyle to help manage my anxiety and weight, I’m rarely hungry enough to eat first thing on the morning. On the weekends, however, I like to occasionally treat myself to a hearty brunch. That’s why I came up with this low carb, keto French toast recipe.
As I’ve mentioned in other “recipes,” I’m no chef. I just like to experiment in the kitchen and share what I’ve enjoyed. There are plenty of amazing people out there who are making their own loaves of wheat-free bread, but I’m not one of them. Sorry! Instead, I ordered some of ThinSlim Food’s Zero Carb Bread and used it for my base in this recipe. We used the Plain flavor, but I’m sure the Cinnamon flavor one would be great for keto French toast too!
Here’s How I Made Keto French Toast
- Combine heavy cream, sugar free sweetener, vanilla extract, eggs and cinnamon in a bowl. I like to add a pinch of salt too!
- Whisk ingredients until well blended.
- Dip pieces of bread into the mixture and then fry in a pan of melted Kerrygold butter over medium heat. Brown on each side.
- Top with more Kerrygold butter and your favorite sugar free syrup.
It’s that easy, folks! I usually whip this up on the fly so I haven’t written down measurements for it yet, but it’s hard to go wrong (just don’t get too heavy handed with the sweetener!). Be sure to enter everything into a macro calculator to be sure you’re not messing with your carb/fat ratios, though!
Of course, this is best served as a meal with some scrambled eggs, a mountain of bacon and a sliced strawberry on the side. My tummy is grumbling just thinking about it! There are a lot of keto recipes that I’ve tried that were good enough, but not really great. This is one of those times when I wanted to stand up and say “hallelujah!” It was THAT good!
When it comes to syrups, you want to be careful. Be sure to read the labels and make a decision that works best for YOU! Some people don’t like sugar alcohols, for example, but I don’t really care that much. When I”m choosing a syrup, I prefer any one of the following:
- Walden Farms Calorie Free Pancake Syrup
- Log Cabin Sugar Free Syrup
- Lakanto Maple Flavored Sugar-Free Syrup
We love breakfast foods in our house — even for dinner! It was heartbreaking to think that I’d have to give them up on the keto diet, so I’m thrilled to have options. We hope this informal recipe helps you enjoy French Toast again!
